Chile güero is the name applied in Mexico to several yellow or yellowish-green chiles, all belonging to the species Capsicum annuum.
In general they are long, thin and sometimes crooked fruits, with varieties in size, colour, flavour and itching. Each regional kitchen prints the specific ways to use them. Roasted, veins and seeds removed, can be filled or cut into slices as a garnish for stews and rice dishes; whole, are prepared in brine or pickle to be canned or preserved in jars, in this way we extend the temporality.
It is a necessary ingredient in the traditional Bacalao a la vizcaina, very popular codfich dish in some cities in central Mexico during Christmas.

Storage:
Keep in a dry, cool place. Once opened, keep refrigerated. Do not refrigerate inside the tin. It is recommended to refrigerate in a little glass bowl or jar with lid.
