Traditionally used as seasoning in Yucatan and Central American dishes, mainly those influenced by the Mayan culture.
Dilute 1oz of paste with ½ a cup of vinegar or 50ml of liquid annatto. It is easy to prepare and is perfect for seasoning beef, chicken, pork or fish.
